Published, not quoted. Larger cellars scale by lot count on the same scale. An outside appraiser runs $2,500 to $6,000 and rebuilds the schedule from scratch every time, because nobody kept the working from the last one. **Do we have to replace BinWise or Backbar to use Aivin?** No, and you should not. Your inventory system counts bottles and reconciles against the POS, which is what it is for. What it does not carry is a market reference, an evidence grade, a drink window or a provenance chain, so it cannot tell an insurer what the cellar is worth. Aivin reads from it and never writes to your POS. **Our wine list is a mess. Will it import?** Not cleanly, and Aivin says so on screen rather than committing bad rows quietly. Half-case splits logged as singles, two growers filed under one surname, Ch. and Château as separate producers, bin cards that disagree with the sheet. An operator resolves that queue by hand, once, and you sign off before anything commits. **Can software appraise a wine cellar?** No, and Aivin does not claim to. The opinion is an appraiser’s and the signature carries their credential. What Aivin removes is the fortnight underneath it: pulling comparables by venue and date, applying format and condition adjustments, and grading the evidence lot by lot. Unsigned, the document states on its own face that it is appraisal support. **What happens to bottles you cannot find a market price for?** Carried at cost, excluded from every market total, and listed as unresolved on the face of the appraisal. Aivin will not interpolate from a neighbouring vintage or a producer average to make a cellar look complete. An estimate with no comparable behind it is the number that collapses the first time an adjuster tests it. **Can two competing restaurants sit on one consultancy account?** Yes, and the isolation is the product rather than a setting. Houses show as letters by default. A cohort under three is suppressed outright, not blurred, because a member who knows their own GP can solve for the rest from an average. Naming anyone needs written consent from every house on the account. **Who owns the cellar data and the pairing notes?** The property does, and it exports complete in CSV or JSON without asking us. Your pairing corrections go with it, attributed to whoever wrote them. Nothing is pooled across houses and nothing trains a shared model, because a cellar list is commercially sensitive and so is knowing what you paid for it. **What can we actually buy from Aivin today?** The free cellar report, delivered by a person in five working days, and nothing else. Subscriptions open to founding houses when their room goes live, and every price is already published so you can decide without booking a call. Nothing is invoiced until a room is live and you have signed off on it. **How do I know if tonight’s pairing can be poured before service?** Load the menu at tonight’s cover count and Aivin does the bottle math per course, then names what the bins cannot cover and what to open instead. Six courses at three ounces is eighteen ounces a guest, so forty covers is three bottles a course and you need two behind it. That screen is Pairing Studio, $225 a month per property. **How long does it take to get a cellar into Aivin?** Five to ten working days per property, and an operator does the work rather than your floor team. Send whatever you keep the list in — an export, a shared sheet, photographs of bin cards — and sign off on the resolved queue before it commits. Nothing to install and nobody to train. **Will this help me get wine cost down?** Indirectly, and the honest mechanism matters. Aivin does not renegotiate with distributors. It finds the capital sitting in lots that have not moved in a year, the bottles past their window still priced as though they were young, and the by-the-glass exposure nobody has costed. Repricing and pouring those is where the points come from. **Does it track allocations and pre-arrival?** It flags them. Lots marked as allocation or mailing list appear on a twelve-month commitment calendar alongside closing drink windows, because skipping a year usually means losing the line and that is a cost no inventory report shows. Pre-arrival and en primeur positions are held as lots with a stated arrival rather than as invoices. ## What Aivin is not - Not a point-of-sale or purchasing system. It reads from Toast, BinWise, Backbar and their peers and never writes to a point of sale. - Not a certified appraiser. Aivin assembles the schedule and the evidence; a credentialed appraiser reviews and signs. Unsigned, every document states on its face that it is appraisal support. - Not a scoring engine. Aivin publishes no ratings and ranks no wines against each other. - Not a consumer app. Everything is sold to the trade and priced per property rather than per seat. ## Stated plainly The platform is in build.
