What is finished, what is part finished and what is still a design, per product, as of 9 August 2026. Which market data is licensed and which is synthetic. Every caveat that would otherwise be scattered across the site sits here, because a dozen disclaimers spread thin reads as apology and the same dozen dated reads as a register.

The register

The pairings are real: Twelve dishes, the wines poured against them, why each worked and the pairing each avoided — verbatim from real service menus as they were run.
The holdings are not: Bottle counts, bins, costs, list prices, depletion history and every market reference are fabricated for demonstration, dated 31 July 2026. Nothing there should inform a financial decision.
The gaps are deliberate: One property never valued, one too thin to certify, one with no lots, two courses uncoverable, and a rack with no bin numbers. Those are the states a real cellar arrives in.
No logo appears without consent: We do not publish a property’s name, logo or metrics until that house has agreed to the exact wording in writing.
The signature belongs to an appraiser: Aivin assembles the schedule and the evidence; a credentialed appraiser reviews and signs. Unsigned, the document says so on its own face.
A person answers, not a sequence: Every form here reaches one of two people. If you have sent something and heard nothing in two working days, write to hello@aivin.ai — something went astray rather than you being in a queue.
Subscriptions are not open yet: Every price is published, and nothing is invoiced until a room is live and the property has signed off.
Two typeface substitutions: Henderson Sans and URW Form are the licensed brand faces. Outfit and Figtree stand in until the licences are bought.
