Where it came from

The inventory system knows the count and nothing about worth. The valuation spreadsheet knows worth and nothing about what was poured last night. A wine director holds both jobs and gets tools for one, which is why so many of them end up maintaining a spreadsheet nobody else can read.

So the platform was rebuilt around one Cellar Record that every product reads and two write to. Close out a service in Pairing Studio and the valuation moves. That single connection is the whole argument and everything else follows from it.

Founded by Brian Winter and built with Pyxl, a product and engineering studio that has been shipping software of this kind for two decades. Sold to wine directors at fine-dining restaurants, to multi-property groups, and to the consultancies that run wine programs for them.

Six rules the product will not break

One record, or none: Two systems disagreeing about the same cellar is worse than one that is late. The bottle in the appraisal and the bottle on the pass are the same object.
Never estimate to fill a gap: A lot with no comparable sales is carried at cost and excluded from every market total. An estimate with nothing behind it is the figure that collapses under a challenge.
Every number opens its working: No figure appears without the reference, the adjustments and the evidence one click away. If it cannot be defended to an appraiser it should not be on the screen.
Appraisal support, not an appraisal: Aivin assembles the schedule so a credentialed appraiser can review and sign. Until one does, the document says so on its face.
A companion, not a replacement: The judgment is the sommelier’s. Aivin argues, shows what it avoided, and asks why when it is overruled.
Your data leaves as easily as it arrived: The property owns its record and exports it complete, at any time, without asking.

What Aivin is not

Not a replacement for a sommelier and not a scoring engine. We publish no ratings, rank no wines against each other, and do not tell a wine director what their palate should be.

Not a certified appraiser. Not a point of sale. Not a consumer app — everything here is sold to the trade, priced per property, and built for a room where the list is part of why people come.
